Cup-Cookies?

My Tuesday started out with some cleaning, and watching Firefly with Collette, before a few friends came over. Jonathan and Ketti came over for some video game fun, we spent a few hours playing Minecraft. Marty came home from work, and Mea (Jonathan’s girlfriend) came over for hotdogs. While they were cooking I decided I wanted to make cookies!

So, I pulled out my little box of chocolate cookie mix, and started mixing! I followed the directions on the box, but added in a whole mashed banana and some cinnamon. After mixing it all up, it ended up a little too liquidy, which didn’t work well for trying to put the cookie mix onto the cookie sheet. Searching for flour to thicken it up a bit, I was disappointed to find that we didn’t have any. Ketti and I  decided that we would just try to putting the mix into cupcake foils. What’s the worst that could happen? Really?

I poured the mix into the foils, filling them just over half way, and stuck the muffin tin into the oven. After 15 minutes of baking at 375, I stuck a toothpick into one to check it, and since they were ready I pulled them out. We let them cool for a minute before excitedly digging in. They were golden and soft, perfect, similar to a muffin, but with the taste of banana-chocolate chip cookies.

Now, I’m sure I’m not the first person to do this, but I thought I’d share my discovery!

I would imagine that you can do this with most any chocolate chip cookie recipe. It would probably be better if it was made to be less thick than normal cookie dough, like mine turned out. But I’ll be trying it out again soon, and I’ll likely share it here!

The rest of our night involved getting together with Jared (Ketti’s boyfriend, both of them are in the above picture) at his house for a while. Jared and I have been good friends for a long time, and he ended up giving me a giant stuffed unicorn, the one from Despicable Me. We loaded it into the car before heading out. Mea, Ketti, Jared and I spent a few hours having fun at Mystic Lake, our local casino. None of us really gamble, so it didn’t last long. We ended up back at my place for some card games, and the rest of my cup-cookies.

Also, Collette really loves the unicorn, even though it is a lot bigger than she is!
